Most of the coffee produced in the country comes from the western part of Honduras where the mountainous, forested region encompasses some of most fertile soil for growing Arabica coffee. 92-percent of coffee production in Honduras happens on a small-scale production operation.
Boulder Organic Coffee, with the help of Fair Trade, USA works directly with co-ops from Honduras to produce this light roast. Chosen to remove the caffeine with a Swiss-Water, this process uses the elements of water, temperature and time to ensure the taste and characteristics remain the same in the coffee, without the caffeine. 99.9-percent of the caffeine is removed when prior to roasting and still in its “green” state. Extremely tedious, the process is replicated 8-to-12 times until the caffeine content meets the required standard.
